ANGKU KUIH (RED GLUTINUOS RICE CAKE)

Hi everybody, i am back. Today i would like to share the recipe for angku kuih which i made during the ninth day of the Chinese lunar new year. This cake is made of glutinuos rice flour skin wrapped around a sweet filling in the centre.It is molded to resemble a tortoise shell and is presented on a banana leaf  and then steamed. These sweet cakes are especially prepared during important festivals as offerings to the Chinese deities.

Ingredients

sweet potato dough
300g sweet potato, i used the purple variety
200g glutinuos rice flour
2 tbsp sugar
2 tbsp oil
150ml water

1. Boil  chunks of sweet potato until soft, Drain.
2. Mash the sweet potato with a fork.
3. Add in all the ingredients, mix well to form a soft dough.
4. Shape dough into 30g small ball.
5. Sprinkle some glutinuos rice flour into the angku mold.
6. Flatten the dough,place a mung bean ball in the centre of the dough, cover and shape into ball.
7. Place the shaped dough in the mold. Press evenly the knock out and place it on a greased banana leaf.
8. Arannge the kuih/cake on a steaming tray and steam for 10 minutes over high heat.
9. Brush the steamed cake with oil
