THAI STYLE VEGETABLES CURRY

Spices and herbs are an essential part of Thai cooking. Used in combination, they help to bring out the four tastes: salty, sour ,spicy and sweet.
Examples of spices and herbs used in Thai cuisine are onions, garlic, green/red chillies, coriander, galangal, lemongrass, tumeric and kaffir lime leaves
This recipe that i am going to share here is adapted from the recipe book" Thai Cooking  ,made easy"

THAI STYLE VEGETABLES CURRY



Ingredients

A
for the curry paste
2 fresh red chillies
1 lemon grass stalk, chopped
3cm piece galangal, chooped
2 kaffir lime leaves
2 tsp ground coriander
a few fresh cilantro sprigs, including the stalk
3 tbsp of water

B
1/2 head cauliflower
1 head broccoli
3 celery stalk
1 carrot
400 ml coconut milk
150 ml water
1 onion ,sliced
2 tbsp vegetable oil
salt and sugar to taste

Method

1. Put ingredients A in a blender and blend till fine into a paste.
2. Wash and cut all the vegetables.
3. Heat 2 tbsp of oil i a wok. Put in the sliced onion and fry till soft Stir in the curry paste and fry until you get     that nice aroma.
4. Stir in the vegetables, add in coconut milk and water.
5. Cover and let it cook till vegetables turn soft.
6. Season with salt and sugar.
7. Garnish with sprigs of cilantro and serve with hot rice.

SWEET AND SOUR CHICKEN

This sweet and sour chicken is a very simple dish. OIL is not needed in this recipe. Just put everything in a wok and cook.

SWEET AND SOUR CHICKEN




Put the chopped chicken( i cooked half a chicken ) in a wok.

Add in 3 tbsp of light soya sauce and 1 tbsp of dark soya sauce


Add in 3 tbsp of sugar.


put in 2 tbsp of vinegar

i used this plum vinegar

Put in 1 tbsp of cooking wine and 5 pips of garlic(crushed). Mix everything together , on the fire and cook. No water added ya...




Stir half way through.


Cook until  the gravy dries up


Dish up and serve.






Yummy with a bowl of hot rice.

KIMCHEE SEAWEED NOODLES SOUP

My colleague gave some kimchee the other day(all the way from Korea) and it has been sitting in the fridge for a number of days. since it is a pickle  it wont get spoilt easily.

It is often described as "spicy" or "sour". [1][2][3] In traditional preparation Kimchi was often allowed to ferment underground in jars for months at a time.[4] It is Korea's national dish, and there are hundreds of varieties made with a main vegetable ingredient such as napa cabbageradishscallion, or cucumber.[5] Kimchi is also a main ingredient for many Korean dishes such as kimchi stew (김치찌개; kimchi jjigae), kimchi pancake (김치부침개; kimchijeon), kimchi soup (김칫국; kimchiguk), and kimchi fried rice (김치볶음밥; kimchi bokkeumbap).


I have kimchee


this packet of seaweed is given by a friend too(from Korea)
 I have some yellow noodles in the fridge, so let us make  kimchee seaweed noodles soup

KIMCHEE SEAWEED NOODLES SOUP

INGREDIENTS

2 cups (500 ml) of chicken broth/stock
200 g of yellow noodles
150 g of kimchee
1 packet of seaweed., cut into strips
5 prawns (shelled)
10 pieces of sliced chicken 
1 piece of fish cake, sliced
1 egg
1 stalk of mustard green(any green leafy of your choice)

METHOD

1. Bring 2 cups of chicken stock to a boil.
2. Put in kimchee, let it cook for 2 minutes.
3. Put in the sliced chicken,fish cake slices and the yellow noodles. Let it cook for a minute.
4. Lastly put in prawn and vegetable, give it a quick stir. crack in an egg, off the fire .
5. Pour soup into a serving bowl, top with seaweed.
6. Top with extra kimchee if you love them.

HAINANESE CHICKEN RICE (POACHED WHITE CHICKEN)

I  have half a chicken  and three tomatoes left in the fridge . So what to cook???? My the other half suggested chicken rice.. the real chicken rice and not the one pot chicken rice. What he meant was Hainanese chicken rice. Hainanese chicken rice is that succulent poached white chicken, cut into bite-size pieces served on fragrant rice with light soya sauce and accompanied by garlic-chili dip.


HAINANESE CHICKEN RICE











Ingredients
for the chicken

1/2 a chicken( preferably free range or kampong chicken)
5 slices of ginger
2 stalks of spring onions
3 pips of chopped garlic

for the rice

2 cups of rice, washed (rice cup not measuring cup)
400 ml of  chicken broth (depending on the type of rice you use)
3 slices of ginger
2 screw pine leaves
fragrant oil

chili sauce for dipping

10 red chilies
5  pips of garlic
sugar and salt to taste
lime juice

1. Defrost the chicken if it is from the fridge. clean the chicken by rubbing salt all over the body. Rinse and         pat dry.
2. Put 1 tbsp of oil in a pot. Saute slices of ginger and chopped garlic until fragrant. Pour out the oil. Keep         this to cook the rice later on.
3. Put water( just enough to cover the chicken) into the the pot. bring water to a boil.
4. Submerge chicken into the boiling water. Put in the spring onion. Lower the fire. simmer the chicken for         20 minutes. Turning the chicken  half way through.
5. When the time is up take out the chicken and submerge the chicken in a basin of iced cool water for about     5 minutes.
6. Rub the chicken with some sesame oil and chop the chicken into bite-size pieces.
7. While the chicken is simmering cook the rice. Put rice, chicken broth, ginger,screw pine leaves and               fragrant oil in electric rice cooker and cook it. When the rice is ready fluff up the rice and discard ginger
    and screw pine leaves.
8. Blend chillies and garlic until fine. season with salt, sugar and lime juice to taste.
9. Serve when the rice is still hot.
