STEAMED TOFU

How do you normally cook your tofu? There are many ways to cook tofu. You can deep fry it, make soup,braise it and steam it. Today I am going to share this mix vegetables steamed tofu.



STEAMED TOFU


Ingredient 

3 pieces soft tofu
3 eggs
3 tbsp chopped prawn
2 tbsp chopped dried shrimps
2 tbsp chopped spring onion
2 tbsp chopped carrot
2 tbsp sweet corn
1 tbsp chopped chillies
1 tbsp chopped garlic
4 tbsp corn starch
1 tsp sesame oil
1 tsp salt
1/2 tsp pepper
1 cucumber for garnishing

Method

1. Mash the tofu. Add in the eggs and mix well.
2. Add in all the chopped ingredients ,corn starch and the seasoning.Mix well.
3. Oil the muffin tin.
4. Fill muffin tin with tofu mixture.
5. Steam for 15 minutes or until cook.
6. Remove tofu from muffin tin and serve.

  Add in chopped ingredients

  

  Scoop mixture into muffin tin

  

  Steam
  

   The ready tofu... Serve in which ever way you want.

STEAMED CARROT RICE FLOUR CUPCAKES (CARROT HUAT KUIH)

Actually I did not plan to post this recipe as  this was my first attemp to use CLABBER GIRL double action baking powder for this cake..and  the result was not up to my expectation but  a few baking fans have asked for the recipe. So here is the recipe.

 STEAMED CARROT RICE FLOUR CUPCAKES


Ingredients 

200 g rice flour
100 g sugar
175 ml water
25 ml carrot juice
(Blend carrot with some water and squeeze out the juice)
1 packet Eno salt
1/2 tsp Double action baking powder

Method

1. Prepare steamer for steaming. Arrange cups in the steamer and heat up the water.
2. Mix rice flour,sugar water and carrot juice together until  you get a smooth batter.
3. Put in the baking powder and Eno salt blend well.
4. Pour batter into the cups until almost full.
5. Steam in high heat for 20 minutes.


    This baking powder made the cakes soft and fluffy.

    This Eno salt helps cupcakes to 'smile'.. Hehe

    This rice  cupcake is  done within 30 minutes so the taste is not as nice as the traditional rice    
     cupcake using the fermentation method whereby yeast is used and the fermentation takes about 7 
     hours. One day I will try making the traditional rice cupcakes using yeast.

STEAMED PUMPKIN BUN

STeamed pumpkin buns






Ingredients

2 tsp instant yeast
300 ml water
650 g pau flour
100 g caster sugar
2 tsp DA Baking powder
50 g shortening
200 g steamed pumpkin

METHODS

1. Mix instant yeast and water together in a container.
2. Mix pau flour, sugar,baking powder , shortening and pumpkin purée in a big mixing bowl.
3. Pour No 1 into No 2. Mix we'll and knead for about 20 minutes or until the dough is smooth and shiny.
4. Cover mixing bowl and let it proof for 30 minutes or until dough double it size.
5. Divide dough into  30 portions of 35 g each. Put in filling. I used the pumpkin kaya which I made the other day.
6. Shape dough into the shape of a pumpkin . I use pumpkin skin as the stalk.
7. Cover the pau and let it proof for 20 minutes.
8. Arrange the pau on the steaming rack and steam over medium heat for about 10 minutes or until cook.

*you may put in any filling of your choice.


    My girl helped me to knead the dough. She complaint of shoulder pain after that. Hehe...

       Love the golden color of this bun.




    My girl does like sweet bun so she put in salted egg yolk as filling. Not bad!

RADISH CAKE (CHAI TAU KUIH)

Radish cake is a popular dim sum dish. It is made of shredded white radish and rice flour as the batter. This savory cake is steamed  and is usually cut into square/rectangular shaped slices and pan fried before serving.
I steamed the cake last night and pan fried the cake for breakfast this morning.

RADISH CAKE

















INGREDIENTS

500 g of shredded white radish
200 g rice flour
30 g dried shrimps
250 ml water
salt and sugar to taste
5 pips of garlic
1 tbsp of oil
dash of white pepper

INSTRUCTIONS

1. Boil shredded radish with water until radish is soft, about 10 minutes. Drain.














2. Chop garlic and dried shrimps.( soak the dried shrimps first)




3. Heat up 1 tablespoon of oil in a wok. saute the garlic and dried shrimps until fragrant. Put in the radish           and fry until well mixed.



3. Mix flour,salt, sugar and pepper with water to form a batter.Pour in the batter into the wok and stir.          
    Remove from fire when it starts to thicken. Transfer batter into a pan and steam for about 30 minutes



4. Remove steamed cake from steamer and let it cool down thoroughly before cutting it into slices.
5. Pan fry the sliced cake until crispy .




6. Serve hot with chili sauce. Enjoy.
